Spicy Lemon Cucumber Pickles

Cucumbers are gourds and the lemon variety is in season, and ready to be thrown into summer salad plates. These cucumbers get their name from their color.  Round and yellow, they don’t taste like lemons, but they are as refreshing as their green counterparts.

Ingredients:

5 to 6 lemon cucumbers, sliced into wedges
1/4 large red onion, sliced
1 serrano chili pepper, seeded and minced
1 tablespoon minced ginger
1 tablespoon fresh lime juice
1 qt. glass Mason or other jar
1 Tb. Himalayan or sea salt
water
