Spicy Lemon Cucumber Pickles

Cucumbers are gourds and the lemon variety is in season, and ready to be thrown into summer salad plates. These cucumbers get their name from their color.  Round and yellow, they don’t taste like lemons, but they are as refreshing as their green counterparts.  

Below is a recipe a lemon cucumber salad that #AsktheSPNutritionist Laura Vetter shares with her patients. The dish has a little kick thanks to the chili peppers used to make it. Visit to find instructions for preparing these refreshing ingredients. 



5 to 6 lemon cucumbers, sliced into wedges
1/4 large red onion, sliced
1 serrano chili pepper, seeded and minced
1 tablespoon minced ginger
1 tablespoon fresh lime juice
1 qt. glass Mason or other jar
1 Tb. Himalayan or sea salt
